θα ήθελα translates as I would like. This is basic politeness - use it when you order food, when you go to your local off-license or kiosk (aka "to periptero"), etc.
θα ήθελα ένα μήλο. - I would like an apple.
Did you notice - ένα μήλο?
Say hi to the most terrifying articles. For now you will only need the forms given bellow, don't stress over cases.
The indefinite article applies when you don't refer to anything specific or want to make a general statement.
It is usually dropped so the apple loving example i gave you in the begging would really sound as θα ήθελα μήλο.

Ένας αρχιτέκτονας σχεδιάζει σπίτια. - An architect designs houses.
For absolutely everything else you need a definite article. It is also used with personal names when talking about someone or something named.

word for word: The Maria is (an) architect. (Maria we already know about)
